Lemon Vinaigrette
This vinaigrette can be customized so many ways. Start with the basics, then let your imagination go wild. Use on top of salads or as a marinade for fish or chicken.
makes approx. 1/2 cup dressing
Ingredients:
¼ cup Sicilian lemon white balsamic (or use fresh lemon juice + 1/2 tsp honey)
1 garlic clove, minced
1 tsp Dijon mustard
1/4 - 1/3 cup of your favorite Nika’s Olive extra virgin olive oil (Try lemon, garlic, Greek thyme, or Rosemary)
1/2 tsp Seasonello herbal salt, or to taste
chopped fresh herbs (optional)
Directions:
Combine all ingredients in a small mason jar with lid, then shake. Keep in fridge for up to 2 weeks. If olive oil becomes solid, simply let it warm up on the counter for 10-15 minutes.
